The Professional Butcher Block features a 16-inch thick solid maple cutting surface atop four sturdy, gently tapered square legs. At 34 inches tall, this block is an ideal height for chopping and food preparation. The work surface is covered with the standard Boos Block Cream Finish with Beeswax. The Boos block cream penetrates deeply into the grains of the wood, leaving a silky wax barrier to lock moisture in, and allows your board to be used as a cutting surface. This finish can be maintained with John Boos Mystery Oil or Boos Board Cream. The legs and side have a Varnique Semi-Gloss finish, which is easily cleaned with mild soap and warm water. The Varnique finish will not be harmed by most household cleaning products and is long-lasting and virtually maintenance-free. This classicly designed, high-quality butcher block will last for generations and is a sound choice for the culinary enthusiast or professional chef.
The 16-inch thick Northern hard rock maple board features end-grain construction. The end-grain work surface is easy on knives; during cutting or chopping, the end grain wood fibers absorb the impact of the blade, which keeps knives sharper longer. The malleable and forgiving end grain surface is resistant to nicks and gouges, which prevents bacteria from entering the wood, keeps the board looking new longer and increases its longevity.

Some of the steps they take to accomplish their “green” status include manufacturing wood products that emit far less carbon dioxide, sulfur dioxide, methane and other gases than processing non-wood substitutes; using only formaldehyde free and low emission formaldehyde gluing processes in manufacturing our butcher blocks; and having active recycling programs in place with 95% of all raw materials, scrap, and even their sawdust recycled as fuel to heat their kilns. Boos’ sawdust is also recycled as livestock bedding for their local agricultural needs.
